Annapolis, MD (October 2007) – Azure, the dining destination in the Westin Annapolis Hotel, is the new home of an award-winning chef who calls Anne Arundel County his home.
James Barrett, the Executive Chef of the Westin Annapolis Hotel and Azure Restaurant, is a resident of Annapolis who grew up nearby, but whose regional travels have earned him a wide-ranging culinary approach.
“My cooking technique is a blend of the cooking experiences I’ve accumulated throughout the United States,” Chef Barrett said. “I hope to create a dining experience for both hotel guests and local residents that will rank among the best on the East Coast.”
Chef Barrett said Azure will focus on seafood preparation, utilizing local food whenever possible and the freshest product to produce superior quality foods.
“I intend to focus on creating smaller portions of food, priced reasonably, so that people can come, enjoy a meal and not be stuffed but leave full,” Barrett said. “I believe that when you order fresh seafood you want to taste the freshness, not have to search for it under 20 different layers of some new spice some chef just learned how to pronounce. I let good, fresh food speak for itself and use flavors to enhance it, not hide it.”
Formerly the chef at The Treaty of Paris, Chef Barrett began his culinary career in Maryland as a youngster in Deale, Maryland. He grew up crabbing and fishing in South County, earning an appreciation and fondness for the Chesapeake Bay. Cultivating his craft in restaurants around the country, Chef Barrett learned his trade at such dining destinations as The Boulders and the Scottsdale Princess in Arizona, and in kitchens in Denver, Albuquerque and Piscataway.
“Annapolitans as well as our hotel guests expect tasty, well-prepared meals and that starts with a fine kitchen,” Chef Barrett said. At Azure, Barrett can also deliver his menu specialties to guests dining al fresco, enabling them to enjoy the passing scene in Annapolis in favorable weather.
A 1997 graduate of Johnson & Wales, Chef Barrett holds a Bachelor of Science degree. He is a two-time silver medal winner at the American Culinary Federation, and holds numerous food and beverage awards.
